Makes 4

Small sardines                20 nos
Finely chopped onion    1 medium  (70 grams)
Ginger                               1-inch piece
Slit green chilli                 1 no
Turmeric powder             1 teaspoon
Dry red chillies                  7 nos
Coriander seeds              1 teaspoon
Grated coconut                  ¼ cup (30 grams)
Thick tamarind pulp         2 tablespoons
Oil                                         2 tablespoons
Salt to taste

1. Clean sardines by removing the heads, fins and tails. Wash and apply salt and turmeric powder. Set aside for 20 minutes.
2. Make a fine paste of grated coconut, coriander seeds, dry red chillies, tamarind pulp and ginger by adding one-fourth cup of water. Set aside.
3. Heat oil in a hollow pan. Add the slit green chilli and chopped onion and sauté until the onions are translucent.
4. Add the sardines and toss it with the onions for a minute. Add one-and-half cup of water and one tablespoon of ground coconut paste. Cook the sardines on a medium flame until done (approximately for three minutes).
5. Add ground coconut paste, salt to taste and bring it to a boil.
6Serve hot with rice or pão.
