Pork Assado

Pork Assado

Serves 4

Boneless pork                400 grams
Turmeric powder           1 teaspoon
Ginger garlic paste        2 tablespoons
Butter                                2 tablespoons
Onions, chopped           2 large
Coriander powder          ½ teaspoon
Cumin powder                ½ teaspoon
Chilli powder                   1 tablespoon
Pork stock or water        2 cups
Chilli garlic sauce          1 tablespoon
8 to 9 Sauce                    1 tablespoon
Tomato ketchup              2 tablespoons
Refined flour                   1 tablespoon
Salt to taste

1. Cut the pork into two-inch cubes. Marinate the cubes in a mixture of salt, turmeric powder and ginger-garlic paste for 30 minutes.
2. Heat the butter in a pan; sauté the onions until they change colour. Add the pork and the coriander, cumin and chilli powders and sauté for five minutes. Add the stock or water and cook until the water evaporates and pork is tender.
3. Add the chilli garlic sauce, 8 to 9 sauce, tomato ketchup and flour and stir well to mix. Simmer over a low heat till the gravy thickens.
4. Serve hot with pão or any Indian bread.
