Renowned restaurateur A D Singh discusses his foray into Goa with Olive Bar & Kitchen in Vagator

You wouldn’t be very far off if you found yourself imagining a Grecian island restaurant overlooking a pristine sea. Olive Bar and Kitchen brings the Mediterranean vibe to Goa with the newest addition to its chain perched on the cliffs of Vagator.

Restaurateur A D Singh succumbed to a long-time temptation of bringing one of India’s best known restaurant brands to Goa, a place he has loved since his teens. Since the flagship restaurant launched in 2000, Singh has added a cluster of 35 ventures that pander to a variety of taste preferences – SodaBottleOpenerWala, Monkey Bar, Lady Baga, Guppi and The Fatty Bao.

Olive Bar and Kitchen Goa is his first restaurant in the state, and many who enjoy the laid-back vibe of this chic space are keen to see what the future of eating holds for Goa.

At the restaurant on Vagator cliff, chefs manu Chandra and Evan Gwynne have created a Mediterranean gourmet café menu inspired by Goa. It promises to carry forward the brand’s passion and commitment to food that is of consistently great quality and high standards, and a clear vision of balancing the cuisine between on-trend techniques and classic, unforgettable taste. The menu draws on Goa’s vibrant food culture for a burst of freshness and flavour.
