Try the gosht ki galouti, tender lamb minced with chilli powder, cashews, and onions flavoured with rose water, screw pine water and saffron; or the vilayati subzi, English vegetables tossed with olive oil, black cumin, low-fat cream, yellow chilli powder and white pepper powder; or the mahi tikka, fish marinated with carom seeds, yellow chillies, yoghurt and ginger-garlic paste; All cooked in the tandoor to perfection.
