Potato Barfi

Potatoes                       ½ kg (4 large)
Sugar                            750 grams
Cardamom powder    1 teaspoon
Pure ghee melted       1 teaspoon + 1 teaspoon
Grated coconut            1½ cup (160 grams)

1. Boil, peel and mash potatoes and set aside.
2. Grease a flat plate with one teaspoon of ghee and set aside.
3. Take deep heavy bottom pan, add mashed potatoes, grated coconut, sugar and sauté for approximately 15 minutes until the sugar melts and the mixture thickens and leaves the sides of the pan. The mixture will make a ball in the centre.
4. Transfer the mixture from the pan into the greased platter, spread and flatten it to a one-inch thick layer. Allow it to cool.
5. Cut into diamond or square shapes and store it into airtight containers.
