Sweet Potato Delight

Sweet potato                                                     250 grams

Pure ghee (melted)                                             4 tablespoon

Sugar                                                             1 cup (250 grams)

Coconut milk                                                     1 cup (250 ml)

Nutmeg powder                                             a pinch

Salt                                                                     a pinch


1 Boil sweet potato, cut it into small pieces and set aside.

2 Heat ghee in a shallow pan, add sweet potato pieces and sauté for a minute. 

3 Sprinkle sugar and nutmeg powder and sauté for a minute. Add coconut milk and simmer until the sugar melts and the coconut milk thickens over a medium flame (approx. 5 minutes).

4 The coconut milk when reduced will have a caramelised coating over the sweet potato.

5 To serve, arrange 8 to 10 pieces in a glass bowl and pour four tablespoons of thickened coconut milk on it. 

6 Serve either cold or at room temperature.
